Herbed Fish Stuffing Recipe

This basic stuffing goes well with any type of fish. Try it with a large whole white fish or with white fish fillets wrapped around it.

This recipe yields approximately 1 cup of stuffing.

Ingredients

  • ½ cup unsalted butter
  • ½ onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 carrot, finely chopped
  • 3 cups fine bread crumbs or Ritz cracker crumbs
  • 2 tablespoons chopped, fresh dill (or 1 teaspoon dried dill)
  • 2 tablespoons chopped, fresh chives
  • 2 tablespoons chopped, fresh parsley
  • Zest from 1 lemon
  • 1 cup low-sodium chicken broth
  • 1 egg, beaten
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked pepper

Instructions

  1. In a large skillet, heat the butter on medium-high until it bubbles.
  2. Add the onion, celery, and carrot. Cook, stirring occasionally, until the vegetables are soft, about five minutes. Cool.
  3. In a large bowl, combine the breadcrumbs, onion mixture, dill, chives, parsley, lemon zest, chicken broth, egg, salt, and pepper. Mix well.
  4. Stuff in a whole fish and bake at 450°F for about 20 minutes or longer depending on size. The fish will be done when it is flaky and opaque.

Cajun Crab and Shrimp Fish Stuffing

This stuffing is delicious with blackened fish such as tilapia or pink fleshed fish such as trout or salmon. It may overpower lighter flavored fish such as sole, cod, or halibut.

Ingredients

  • ¼ cup unsalted butter
  • ½ onion, finely chopped
  • 1 celery stalk, finely chopped
  • ½ green bell pepper, ribs and seeds removed and finely chopped
  • ½ teaspoon sea salt
  • ½ teaspoon cayenne (or to taste)
  • 2 garlic cloves, minced
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • ½ cup cooked lump crab meat
  • ½ cup cooked baby shrimp
  • Up to 1 cup of low-sodium chicken broth

Instructions

  1. In a large skillet, melt the butter on medium-high.
  2. Add the onion, celery, bell pepper, salt, and cayenne. Cook, stirring occasionally, until the vegetables are soft, about five minutes. Add the garlic and cook, stirring constantly, for 30 seconds. Cool.
  3. In a large bowl, combine the breadcrumbs, egg, crab meat, shrimp, and the onion and garlic mixture. Mix well. If too dry, moisten with a little low-sodium chicken broth.
  4. You can stuff this in a whole fish and bake at 450°F until the fish is done, or wrap boneless, skinless fillets around the stuffing and bake at 350°F until the fish is flaky, 20 to 25 minutes.

Gluten-Free, Dairy-Free, Low-Carb Fish Stuffing

If you're on a special diet or you can't have gluten, then this low-carb, dairy-free, gluten-free fish stuffing is a great way to still enjoy stuffed fish without the gluten, dairy, or carbs. This is delicious in snapper and similar fish.

Prep time: 10 minutes Cook time: 25 minutes Total time: 35 minutes Yield: Approximately 2½ cups

Ingredients

  • ¼ cup avocado oil
  • ½ onion, finely chopped
  • ½ fennel bulb, finely chopped
  • ½ red bell pepper, ribs and seeds removed and finely chopped
  • 2 cups almond meal or almond flour
  • 2 tablespoons finely chopped fennel fronds
  • 1 tablespoon chopped, fresh thyme
  • 2 tablespoons finely chopped fresh parsley
  • 1 egg, beaten
  • ½ cup low-sodium broth
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. In a large skillet, heat the avocado oil on medium-high until it shimmers.
  2. Add the onion, fennel bulb, and bell pepper and cook, stirring occasionally, until the vegetables are soft, about five minutes.
  3. Cool.
  4. In a large bowl, combine almond meal, cooked vegetables and oil, fennel fronds, thyme, parsley, egg, salt, and pepper. Mix well.
  5. Moisten with additional chicken broth if needed.
  6. Stuff in a whole fish and bake at 450°F for about 20 minutes or wrap fish fillets around the stuffing and bake at 350°F for 20 to 25 minutes.

Storing Leftover Stuffing

Store leftover stuffing separately from fish in the fridge for up to three days. Use extra stuffing in stuffed mushrooms or as filling for stuffed bell peppers.
