Baked Halibut Steak

Halibut steaks are cross cuts of halibut. Cook them with the skin on, and then remove skin and pin bones before serving. Basic Baked Halibut Steak

This is the most basic recipe for a baked halibut steak. Cooking the halibut with milk can help remove any fishiness it can develop if it isn't fresh from the ocean. This recipe serves 4.

Ingredients

  • 2 pounds halibut steak
  • Butter or other fat
  • Pepper and salt
  • 1 cup milk
  • Hollandaise or Bearnaise sauce

Instructions

  1. Rub steaks well with butter or other fat, pepper and salt.
  2. Lay steaks in baking pan and pour the milk over them.
  3. Baste often while cooking until all the milk is used.
  4. Serve with the sauce spooned over the top

Roasted Halibut Steak in Parchment

Roasting halibut steaks wrapped in parchment keeps the fish moist as it cooks and allows the herbs to flavor it. This recipe serves 4.

Ingredients

Roasted Halibut Steak in Parchment
  • 4 large pieces of parchment paper
  • 4 6-ounce halibut steaks
  • Sea salt
  • Freshly cracked black pepper
  • 2 lemons, cut into 4 wedges each
  • 8 thyme springs
  • 8 pats of unsalted butter

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Place the halibut in the center of each square of parchment.
  3. Season the fish generously with salt and pepper.
  4. Top each piece with 2 sprigs of thyme.
  5. Place 2 pats of butter on top of the thyme on each piece of fish.
  6. Squeeze the juice of one lemon wedge over each piece and then put that lemon wedge and a second one on top of the halibut.
  7. Wrap the parchment around the halibut, sealing it completely. Place each packet on a rimmed baking sheet.
  8. Bake in the preheated oven until the fish is opaque and flaky, approximately 15 to 20 minutes.

Orange Dill Halibut Steaks

Halibut steaks are tasty with orange juice and fresh dill. Red pepper flakes add a dash of heat. The recipe serves 4.

Ingredients

Orange Dill Halibut Steaks
  • Juice of 2 oranges
  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • 2 tablespoons minced shallot
  • 2 tablespoons chopped, fresh dill
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly cracked black pepper
  • Pinch of red pepper flakes (or more for more heat)
  • 4 6-ounce halibut steaks
  • 4 sprigs of dill for garnish
  • Orange slices for garnish

Instructions

  1. Preheat your oven to 450 degrees Fahrenheit.
  2. In a shallow pan, whisk together the orange juice, mustard, olive oil, shallot, chopped fresh dill, salt, pepper, and red pepper flakes.
  3. Place the halibut steaks in the marinade and let them rest, refrigerated, for 15 minutes, turning them once.
  4. Remove the halibut from the marinade and put it on a rimmed baking sheet.
  5. Brush each piece of fish the marinade.
  6. Bake in the preheated oven until the fish is opaque and flaky, about 15 minutes.
  7. Garnish with dill and orange slices to serve.

Storing Leftovers

Fish, especially a delicate white fish like halibut, is best when it is very fresh and served immediately. However, if you do have leftovers, you can store them tightly sealed in a zipper bag in the fridge for a day or two. Eat any leftovers as soon as you can.
