Fried Celery Recipe

Fried celery

Ingredients

  • 12 stalks of celery
  • 1 and 1/4 cups olive oil
  • Flour
  • 2 large eggs, beaten
  • Salt

Directions

  1. Add 1 tablespoon of salt to 4 quarts of water and bring to a boil.
  2. While the water is heating, slice the stalks into bite-size pieces.
  3. When the water boils, add the celery pieces and cook until just tender, about 6 minutes.
  4. Remove the pieces from the pot and drain them on paper towels to absorb the excess liquid.
  5. While the celery is draining, pour the olive oil in a frying pan and heat it until it's very hot.
  6. Pour the flour in a large bowl and dredge the celery in it.
  7. Dip the celery pieces in the egg and then drop them in the hot oil.
  8. Cook the celery until it's golden brown.
  9. Remove the pieces from the frying pain, and drain them again on paper towels to absorb the excess oil.
  10. Sprinkle the celery with salt, pepper or your favorite seasoning, and serve the dish hot.
Braised celery

Braised Hearts of Celery Recipe

Celery hearts are the tender white stalks from the center of the bunch, and they deliver a lovely flavor when braised in broth.

Ingredients

  • 1 and 1/2 pounds celery hearts
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 2 teaspoons sugar
  • 1/2 teaspoon salt

Directions

  1. Wash the celery and cut it into 3-inch long pieces.
  2. Lay the pieces in a large frying pan.
  3. Combine the rest of the ingredients in a bowl and then pour them on top of the celery.
  4. Bring the liquid to a boil and then cover the pan with a lid.
  5. Reduce the heat and simmer for approximately 30 minutes or until the celery is tender.
  6. Remove the celery from the liquid to a warm platter.
  7. Boil the remaining liquid in the pan until it reduces to about 1/2 cup.
  8. Pour the liquid over the celery hearts and serve.

Ingredients

  • 3 cups celery, cut in inch pieces
  • 2 cups boiling water
  • 2 cups white stock
  • 1 slice onion
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • 1 cup cream
  • Salt
  • Pepper

Directions

  1. Parboil celery in water ten minutes.
  2. Drain water and add stock. Cook until celery is soft and then rub through sieve.
  3. Scald onion in milk and then remove it.
  4. Add milk to stock, blend, add cream, and season with salt and pepper.
  5. Serve hot.
