  11. Turn the edges of pie crust under and finish the pie edge as desired.
  12. Bake the pie for 35 to 40 minutes or until golden brown.

Skillet Chicken Pot Pie With Fall Vegetables

This pot pie is a great, one-dish meal that is easy enough for a weeknight dinner, yet fancy enough for guests. Serve it with a side salad and crusty rolls for an unforgettable dinner! The recipe serves six.

Ingredients

Pot Pie Skillet
  • 1/4 cup olive oil
  • 1 cup purple onions, minced
  • 4 cloves garlic, finely chopped
  • 1 tablespoon fresh thyme
  • 1 small bunch endive, chopped

  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 sweet potatoes, peeled, cut into 1/2-inch pieces

Directions

  9. Bring mixture to a boil, reduce heat, and simmer until sweet potatoes are soft and broth is thick, about six to eight minutes.
  10. Add mushrooms and chicken to pan, and season with salt and pepper to taste.
  11. Place pie crust over skillet.
  12. Whisk egg and one teaspoon water in a small bowl, and brush over pie crust.
  13. Using a sharp knife, cut vents into pie crust.
  14. Bake pot pie 15 to 20 minutes, or until it begins to brown.
  15. Reduce oven temperature to 375 degrees Fahrenheit, and bake until pastry is deep brown and crisp, about 15 to 20 additional minutes.
  16. Allow pot pie to cool for 10 minutes before serving.
