- Roll the puff pastry dough out onto a surface prepared with flour until you have a rectangle. The size of your rectangle will depend on the amount of meat you have left.
- Add taco meat to the center.
- Pull sides up and around, then gently roll just enough to seal the seam and create the rounded "bite" look.
- Cut into bites approximately 2" in length.
- Place on a cookie sheet or jelly roll pan lined in parchment paper.
- Brush each bite with egg wash. Sprinkle sesame seeds on top.
- Bake for approximately 10 to 12 minutes or until the pastry dough is browned.

- Preheat oven to 350 degrees Fahrenheit.
- Sautée the onions and peppers in the vegetable oil on top of the stove at medium-high.
- Once the onions are translucent and the peppers fragrant, add the tomato sauce and stir to combine.
- Once the sauce is properly heated, pour over the Mexican rice and chopped tomatoes. Add the cream cheese. Mix until well combined; the cream cheese should melt and help serve as a binder.
- Spread the rice mixture in a greased 9x13 baking dish.
- Sprinkle leftover taco meat on top of the rice mixture.
- Cover the top of the casserole with the cheese.
- Add sliced tomatoes to the top of the casserole.
- Bake for 20 to 30 minutes; cheese should be bubbling when you pull the casserole out.
