Ingredients
- 1/4 cup sweet red wine
- 1 teaspoon soy sauce
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1/2 pound boneless pork roast, cut in 1-1/2 inch cubes
- 1 tablespoon olive oil
- 1-1/2 cups warm water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced fresh ginger
- 1 tablespoon fresh orange juice
- 1 tablespoon grated orange zest
- 4 green onions, cut into 2 inch lengths
Instructions
- Marinate your pork in the wine, soy sauce, garlic, and lemon juice for one hour.
- Soak the clay pot in cold water for 30 minutes.
- Drain the pork and pat dry.
- Sear the pork on all sides in a hot skillet, but do not cook through.
- Set the pork in the clay pot, mix together the remaining ingredients, and pour over the pork.

- 3 tablespoons water
- 1 5-inch piece of ginger, peeled and thinly sliced
- 4 tablespoons garlic, minced
- 3 tablespoons soy sauce

- 2 tablespoons freshly squeezed lime juice (from about 1 medium lime)
- 2 Thai red chiles, halved lengthwise
- 12 bone-in chicken thighs
- 1 cup chicken broth
- 1 medium red onion, thinly sliced
- Salt
- Pepper
Instructions
- Soak the pot for 30 minutes in cold water.
- Place the brown sugar and water in the pot and stir to dissolve the sugar.
- Add the ginger, garlic, soy sauce, fish sauce, lime juice, and chilies, and place the pot on the stove.
- Bring the mixture in the pot to a boil and remove from heat.
- Add the chicken to the pot, cover, and allow to marinate for one hour.
- Add the chicken broth, onion, salt, and pepper to the pot and bring to a boil.
- Reduce the heat to low and simmer for one hour, or until the chicken is tender.
