Ingredients

  • 1 red onion, thinly sliced
  • 1 fennel bulb, thinly sliced
  • 2 sweet tart apples (such as Honeycrisp), peeled, cored, and thinly sliced
  • 1 red pepper, seeded and thinly sliced
  • 1 boneless skinless turkey breast half, about 2 pounds
  • Sea salt and fresh cracked black pepper
  • 3 cloves of garlic, minced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1/2 cup chicken stock
  • 1 teaspoon dried thyme
  • 3 tablespoons cornstarch
  • 3 tablespoons chicken broth

Instructions

  1. Place the onion, fennel, red pepper, and apple slices on the bottom of the slow cooker.
  2. Season the turkey breast liberally with sea salt and black pepper and place on top of the apples, onion, peppers, and fennel.
  3. In a small bowl, whisk together the garlic, apple cider vinegar, Dijon mustard, chicken stock, and dried thyme. Pour the mixture over the turkey.
  4. Put the lid on the slow cooker and cook on high for five to six hours or low for eight to 10 hours.
  5. Remove the turkey and the apples/fennel/onions/peppers from the slow cooker and set aside. Pour the liquid into a small saucepan and bring it to a simmer over medium-high heat.
