This recipe serves 4

Ingredients

  • 1 chicken cut into 4 pieces
  • ¼ cup of lemon juice
  • 3 tablespoons of olive oil
  • ¼ red onion, diced
  • Zest of 1 lemon
  • 1 teaspoon of cumin

Instructions

  1. Mix everything together in a baking dish large enough to hold the chicken pieces.
  2. Add the chicken and turn them to coat with the marinade.
  3. Cover with plastic wrap.
  4. Let rest in your refrigerator overnight, turning occasionally.
  5. Grill over medium heat for 8 minutes per side for breasts and 12 minutes per side for leg pieces.
  6. Serve with salsa and barbeque sauce.

Okay, this isn't an actual tandoori recipe, but it's close enough in taste and you can make it on a grill.

Ingredients

  • 5 large cloves of garlic
  • 1 ½ tablespoons of freshly grated ginger
  • 2 cups of plain yogurt
  • 2 tablespoons of olive oil
  • 1 tablespoon of ground cumin
  • 1 tablespoon of ground coriander
  • 1 teaspoon of crushed red pepper
  • 1 teaspoon of paprika
  • ½ teaspoon ground turmeric
  • ½ teaspoon fresh ground pepper
  • 1/8 teaspoon ground cinnamon
  • 6 pounds of skinless chicken parts (legs, thighs, and breasts)

Instructions

  1. Mash the garlic with a garlic press into a large bowl.
  2. Mix everything else into the bowl.
  3. Add the chicken and toss to coat.
  4. Cover with plastic wrap and refrigerate overnight.
  5. Grill over medium heat for 8 minutes per side for breasts and 12 minutes per side for leg pieces.
  6. Be sure the chicken is 170 degrees before serving.
