Muffins
Muffins are a great start to any day and when the kids help with the mixing they are twice as delicious. You can add chocolate chips or blueberries to these muffins or you can swap a cup of mashed banana for the yogurt and add some walnuts to make banana-nut muffins.
Ingredients
- 2 ¼ cups of all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- ½ cup sugar
- ½ cup vegetable oil
- 1 large egg
- 1 egg yolk
- 1 cup of either plain yogurt or of mashed banana
- 1 cup of chocolate chips, blueberries or chopped walnuts. If you are using blueberries or nuts, you can go as much as 1 ½ cups.
Instructions
- Preheat your oven to 375 degrees.
- Prepare your muffin tin by either spraying it with non-stick spray or lining it with paper cups.
- Mix together the flour, baking powder, baking soda, and salt.
- In another bowl, mix together the sugar, vegetable oil, egg, egg yolk, and the yogurt or banana.
- Add the wet ingredients to the dry ingredients.
- Mix just until the batter is combined (you don't have to mix the batter smooth).
- Fill the cups to the top.
- Bake for 20 minutes.
- Test for doneness by inserting a toothpick into the muffin. If it comes out clean, the muffin is done.
- Serve warm.
Breakfast Pizza
Can you really have pizza for breakfast? Yes, you can, and this recipe is a kid favorite to make and to eat.
Ingredients
- 1 roll of biscuit dough, enough for 10 biscuits (the kind that comes in the tube)
- 1 large orange
- 8 ounces of cream cheese at room temperature
- 2 tablespoons of honey
- 1 pint of strawberries
Instructions
- Preheat your oven to 400 degrees.
- Place two biscuits one on top of the other.
- Roll the stacked biscuits out to 6-inch round and 1/8-inch thick.
- Place the dough on a cookie sheet that has been lined with parchment paper.
- Dock the dough by poking the surface with a fork.
- Do the same with the remaining biscuits.
- Bake the dough rounds for 8 minutes or until lightly golden.
- Remove from the oven and let cool.
- Grate the zest from the orange.
- Mix together the zest, cream cheese, and one tablespoon of the honey until smooth.
- Slice the tops off the strawberries and slice them lengthwise into three or four slices.
- Squeeze the juice from the orange.
- Mix the juice, strawberries, and the second tablespoon of honey in a bowl.
- Increase the oven temperature to 425 degrees.
- Spread the cream cheese on the baked dough to a half-inch from the edge.
- Bake the pizzas until the cheese starts to brown.
- Remove the pizzas from the oven and spread the strawberries on the top of each pizza.
