- Bring the water to a boil, cover the pot and reduce the heat to a simmer.
- Steam the mold for approximately 2 hours, adding additional boiling water as needed to keep the level even.
- Cool the pudding for 5 minutes before loosening from the mold. Serve warm with fresh cream.
Orange Pudding Pie
This traditional cornstarch pudding is served in a pie plate filled with fresh oranges and topped with baked meringue.
Ingredients
- 3 cups milk
- 3 eggs, separated
- 1 cup sugar plus 3 tablespoons
- 3 tablespoons confectioner's sugar
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 3 tablespoons cornstarch
- 1 tablespoon water
- 7 oranges, segmented
- 1/4 teaspoon cream of tartar
Instructions
- Mix together 3 tablespoons granulated sugar and 3 egg yolks.
- Heat the milk in the top half of a double boiler.
- Stir in the egg and sugar mixture, along with the lemon and vanilla extracts.
- Mix together the cornstarch and water in a bowl until smooth.
- Add the cornstarch to the double boiler and stir until thickened.
