Salmon is one of the most versatile fish on the market, showing up in salads, on bagels, and even served as a mousse, but a nice piece of smoked salmon just needs a touch of a smoked salmon glaze recipes available to create a spectacular dinner.

Smoked Salmon Glaze Recipes

Smoking is a fantastic way to get a deep and complicated flavor imparted to your food without overpowering its natural taste. Usually, when smoking food a spice rub is used to enhance the smokey flavor and to help the food develop an enticing crust. But salmon is a delicate fish, so rather than rub the spices in (and, yes, you could just sprinkle the spice rub on the fish), I like to use a glaze.

Smoking Basics

As I covered in my smoked crown pork recipe article, smoking is a pretty simple procedure, all it takes is a little preparation. In order to smoke anything, you will need some smoking wood chips, about 72 ounces, and three large pieces of foil. Soak 48 ounces of the wood chips in cool water for at least an hour and then drain them. Separate the wet chips into thirds, placing one third on each of the sheets of foil. Top the wet chips with the dry chips. Fold the foil into a packet and poke holes in the top.

Salmon Glaze

These recipes are for 4 4-ounce salmon fillets.

Bourbon Glaze

Ingredients

  • ¼ cup honey
  • ¼ cup bourbon
  • ¼ cup soy sauce
  • Olive oil

Instructions

  1. Mix the honey, bourbon, and soy sauce well.
  2. Let the coals get very hot in your grill or, if you have a gas grill, turn one side to high and leave the other side off.
  3. Place the wood chip packets on the hot coals or over the hot side of the grill.
  4. Brush the grill with olive oil.
  5. Place the salmon steaks on the oiled grill.
  6. Place the cover on the grill.
  7. Brush the mixture over the salmon steaks periodically as they smoke.
  8. Let the salmon steaks smoke for 1 to 1 -1/2 hours.

Apple Glaze

Ingredients

  • 1 ½ cups of apple juice
  • 3 tablespoons of fresh rosemary, chopped
  • 1 teaspoon of freshly ground pepper
  • ½ teaspoon of salt
  • 4 tablespoons of apple jelly, melted (heat it in a small saucepan until liquid)
  • Olive oil

Instructions

  1. Mix together apple juice, rosemary, salt, and pepper.
  2. Set aside ½ a cup of the mixture.
  3. Let the salmon steaks marinade in the mixture for at least one hour.
  4. Remove the salmon from the marinade and discard the marinade that the fish had been soaking in.
  5. Let the coals get very hot in your grill or, if you have a gas grill, turn one side to high and leave the other side off.
  6. Brush the grill with olive oil.
  7. Place the salmon steaks on the oiled grill.
  8. Place the cover on the grill.
  9. Brush the saved mixture over the salmon steaks periodically as they smoke.
  10. Let the salmon steaks smoke for 1 to 1 -1/2 hours.
  11. Once the salmon is done, remove from the grill and brush with the melted apple jelly.
